Signature cuisine

The chef

Chef Paolo Romano‘s career has been a constant ascent toward the essence of taste. Trained in 2008 within the rigor of 5-star luxury hospitality in Madonna di Campiglio, Paolo refined his technique in Tuscany at the court of the two-starred Arnolfo, where he learned the millimetric precision of signature cuisine.

His background was further enriched on Lake Garda alongside Andrea Costantini (long-time right-hand man to Bruno Barbieri), absorbing the secrets of the great Italian masters. After a decade of research throughout the peninsula, the call of his native Sicily became irresistible: from the prestigious kitchens of Villa Igiea to the entrepreneurial challenge of his own restaurant, Pablo’s, and his collaboration with the Michelin-starred Giuseppe Costa.

Today, Paolo Romano puts his prestigious signature on the cuisine of Villa del Gattopardo to translate the history and soul of the residence into unforgettable flavors.
